酸辣菜尾 Assam Chai Boi

新年一定很多剩菜,剩菜要怎么处理? 小时候我最爱吃婆婆煮的酸辣菜尾了!大家也来试试自己煮!
【酸辣菜尾】
 
材料:
1) 芥菜 1.2kg(撕成大块状)
2) 烧鸭 1kg(斩块)(任何味道不太重的剩菜都行哦!)
3) 姜片 80g
4) 大洋葱 3粒(切片)
5) 辣椒干 20条
6) Asam 片 45g
7) 白萝卜 半条(切片)
8) 蒜头 8球
9) 清水 适量
 
调味料:
1) 黄糖(Brown Sugar) 1Tbsp
2) 盐 1tsp 或适量
 
做法:
1) 热油锅,爆香洋葱丝和姜片,然后再加入辣椒干炒香。
 
2) 加入芥菜炒软,再把其余全部材料加入。
 
3) 加入适量清水(必须能盖过菜的表面)煮滚,把调味料加入。
 
4) 盖上锅盖,焖煮1小时,直到菜变软,即可。
 
5) 这锅菜尾够10多个人吃,吃不完的菜尾,留到第二天,更美味。
 
6) 我加了比较多的姜片,因为芥菜比较寒凉,怕家里老人家的体质受不了。
 
7) 菜尾里头的酸辣味,可随自己口味调整。
 
8) 建议用骨头的部分来煮(因为这些部分会比较咸和香),用骨头煮出来的菜尾,会比用肉煮出来的还要好吃。
