三角眉豆黑糯米棕 Black Eye Beans Rice Dumplings

材料:
黑糯米 ~ 600g (浸水至少5小时,沥干)
椰浆 ~ 350ml
盐 ~ 1茶匙
糖 ~ 3汤匙
 
眉豆 ~ 100g (浸水20分钟,沥干后加入1000ml的水和1茶匙的盐煮30分钟,捞起沥干,备用)
 
做法:
1. 将全部材料,(眉豆除外)放入一大蒸盘里拌匀,大火蒸25分钟。
2. 打开蒸锅,用汤匙搅拌黑糯米饭,再放入蒸锅继续用大火蒸20分钟,取出待冷。
3. 将已蒸好的眉豆加入黑糯米饭中混合均匀。
4. 将palas 叶拨开,做成漏斗形,包入适量的黑糯米饭,再包成三角型(如这的做法)即可。
5. 把三角粽放入滚水里煮10分钟,捞起沥干。
