【啤酒鸭】Duck with Beer

材料:
啤酒  一瓶
生姜 一块
大蒜 5瓣
辣椒 一/两根
八角  3-4个
桂皮  少许
葱段 一把
老抽 2汤匙
盐  少许
白糖  少许
鸭  一只(要求不要太大,挑瘦一点的,膘不能多)

做法:
1)把鸭剁块,记得要保留完整的头,翅,腿和爪,以便装盘时拼造型,再用沸水汆烫。
2)开油锅,将油熟至70度时将桂皮,生姜,蒜,八角,辣椒,葱段倒入油锅炒5分钟,出香味时将鸭子倒入一起翻炒,肉成白色即可。
3)然后倒入啤酒(可视鸭子多少而定,半只大半瓶啤酒)、老抽、盐(根据自己平时的盐淡来放),盐淡自己要掌握好。倒入的料(啤酒、酱油、盐等)与鸭子肉平,然后开大火烧开。
4)大火烧开后5分钟,开中小火闷煮。待汤水快烧干时放点糖,然后起锅。

小贴士:
1)鸭肉的膻味较重,先用沸水汆烫,再下锅煸至出油,此法可消除鸭肉的膻味,焖煮后的鸭肉鲜美,汤也香浓味美。

2)酱油一定要用老抽,不要用生抽鲜味酱油.刚开始时盐和糖不要放太多,等收水的时候根据自己的口味调节。

3)用啤酒炖煮鸭肉,鸭汤会有很浓郁的啤酒味,不过久煮后酒味就会渐消,只吃鸭肉不喝汤,并不会醉人。
