福建粽 Hokkien Style Rice Dumpling

【福建粽】
 
材料1:
粽叶 : 250g (浸泡过夜, 洗净)
尼龙绳 : 适量
 
材料2:
糯米 : 2 kg (浸泡4小时, 沥干水分)
 
材料3:
葱蒜碎 : 1 tbsp
 
材料4:
盐 : 5 tsp
胡椒粉 : 1tsp
五香粉 : 1tsp
黑酱油 : 1tbsp
麻油 : 1tbsp
 
方法:
烧热4汤匙油, 爆香葱蒜碎。
倒入糯米炒香。
加入材料4 的调味料炒均, 盛起待用。
 
馅料
材料1:
葱蒜碎 : 1 tbsp
虾米 : 200g (洗净, 泡软, 沥干)
 
材料2:
葱蒜碎 : 2 tbsp
香菇 : 40 朵 ― ② (洗净, 泡软, 沥干)
 
材料3:
三层肉 : 2 kg (洗净,切40 块, 加入调味料腌1小时)
蚝油 : 2 tbsp
黑酱油 : 1 tbsp
麻油 : 1 tbsp
花雕酒 : 2 tbsp
胡椒粉 : ½ tsp.
五香粉 : ½ tsp
盐 : ½ tsp
糖 : ½ tbsp
粟米粉 : 1 tbsp
 
材料4:
栗子 : 250g (洗净, 浸泡过夜)
 
做法:
1)以中火烧热3 tbsp油,投入材料1炒至香, 盛起, 待用。
2)以中火烧热3 tbsp油,爆香材料2的葱蒜碎后,加入香菇炒香。
3)加入已腌好的三层肉炒香。
4)加入栗子炒均。
5)加入适量水, 煮至汁将收干时,盛起。
6)取2片粽叶折成斗形。
7)放入2 tbsp炒香糯米,中间挖个洞,加入馅料,盖上2汤匙糯米,包好,用尼龙绳绑紧。
8)煮开一锅水,投入已绑好的粽子, ,盖上锅盖,以小火煮约2小时。至熟透,即可捞起。
